Chef Ed is our in-house butcher and the driving force behind all things food at West Lodge. With a passion for quality, provenance, and flavour, Ed oversees the butchery, deli, and kitchen with expert care — from selecting the finest cuts to creating innovative menus for our events and seasonal specials. Whether it’s preparing 28-day matured beef or developing new sausage recipes, Ed’s skill and dedication ensure everything we serve is crafted to the highest standard.

A third-generation farmer, Ed Dee is passionate about British farming and knowing exactly where our food comes from. He believes in producing meat the right way — with respect for the land, the animals, and the environment. Ed champions regenerative farming techniques and is committed to sustainability and responsible farming practices that protect the soil, support biodiversity, and ensure a future for the next generation. From field to fork, Ed’s ethos runs through everything we do at Dee Family Farm.
